We’re honoured to be included in the Sunday Times Top 100 Restaurants 2026 — one of only a handful of Cork restaurants recognised in Ireland’s most prestigious restaurant list. Thank you to everyone who has supported Probys Kitchen since we opened our doors.


Probys Kitchen is a bistro. In true Cork city style, however, it is a bistro with five-star cooking. Pat Browne’s cooking is clean, elegant and inviting: an inventive butternut squash tarte tatin with soya yoghurt; old-school classics such as rabbit stew with mustard and cream — a dish that has all but vanished from the repertoire; smoked duck breast with piccalilli and hazelnuts; ketaffi cheesecake with poached rhubarb and pistachio. The dishes are a study in professional practice, as you might expect of a chef who moonlights as a teacher at the Ballymaloe Cookery School and who is also a noted forager. That professionalism is evident in every aspect of Proby’s — service, style, subtlety, understatement — thanks also to Browne’s partners, Denis O’Mullane and Marianne Delaney, who already manage two of the city’s busiest destinations. A class act all the way.
